Lean Meat Sauce over Quinoa


I created this dish when I was pressed for time and had pre-made Quinoa and my signature sauce in the fridge. Laura’s lean ground beef (96% lean) is typically on my grocery list and I had to think up something quick. This is nothing special, but I sure tastes great and I made it under 30 minutes!

  • Spray a pan with pam cooking spray.

  • Cook the ground beef over medium heat for about 10 minutes until completely brown. Stir every few minutes to ensure that all beef is cooked thoroughly.

  • Pour sauce into the same pan as the beef and let simmer on low-medium heat for about 15 minutes. Stir frequently.

  • Scoop a few tbsp-1/4 cup of cooked quinoa onto a plate. Top the quinoa with the meat sauce. Finish plate off with a few sprinkles of freshly shaved parmesean cheese.

  • I baked some zucchini as well and will have that simple recipe in another post.
