Lean Meat Sauce over Quinoa
I created this dish when I was pressed for time and had pre-made Quinoa and my signature sauce in the fridge. Laura’s lean ground beef (96% lean) is typically on my grocery list and I had to think up something quick. This is nothing special, but I sure tastes great and I made it under 30 minutes!
Spray a pan with pam cooking spray.
Cook the ground beef over medium heat for about 10 minutes until completely brown. Stir every few minutes to ensure that all beef is cooked thoroughly.
Pour sauce into the same pan as the beef and let simmer on low-medium heat for about 15 minutes. Stir frequently.
Scoop a few tbsp-1/4 cup of cooked quinoa onto a plate. Top the quinoa with the meat sauce. Finish plate off with a few sprinkles of freshly shaved parmesean cheese.
