Cinnamon Stevia Sweet Potato Fries

Main Ingredients
3 large sweet potatoes peeled and cut into slices
2 tbsp Stevia in the raw
1 1/2 tsp ground cinnamon
1 tsp olive oil
1 tbsp parkay spray butter
Finishing Ingredients
1 tbsp Stevia in the raw
1/2 tsp ground cinnamon
Preheat oven to 375 degrees. Peel the potatoes.
Cut potatoes vertically into long thin strips. The thinner they are cut, the faster they will cook and the crunchier they will be. Put potatoes in a large bowl and add all main ingredients (except pam spray) to the bowl. Mix well with your hands so all strips are fully coated.
Spray a large cookie sheet with pam and spread all potatoes out evenly on the sheet. Try to keep a little bit of space between each strip. Feel free to use more than one sheet.
Bake for 45 minutes and make sure to flip (with tongs) about half way through. Keep an eye on them and cook to your desired "texture." Take out of the oven and top with the "finishing ingredients."
