Strawberry Shortcake Protein Mug Cake
3 1/4 tbsp vanilla protein powder low sugar/carb
2 tbsp almond meal
2 large egg whites
3/4 tsp vanilla extact
1/3 tsp baking powder
2 1/2 tbsp Stevia in the raw
1 3/4 tbsp vanilla unsweetened almond milk
1 tbsp Fat Free Plain Greek Yogurt
3 tbsp Fat Free Plain Greek Yogurt
2 tbsp reduced sugar cool whip
2 tsp stevia in the raw powder
3/4 cup chopped strawberries
Hey all! I have read so much about these darn mug cakes and I finally decided to make one of my own! I love Strawberry Shortcake and I love quick treats…so I decided to go for a strawberry shortcake mug cake! It literally took me 5 minutes to make from start to finish…and look how prrrrty it turned out:)
Mix all cake ingredients in a medium bowl and blend well either with a wisk or hand blender. In a separate bowl, mix the topping ingredients (besides the strawberries) together and blend well.
Spray a large mug with pam and then pour cake batter into the mug.
Microwave the mixture for 1 min and 30 seconds. Watch the microwave because you may need to stop half way through due to overflow. Continue cooking as soon as cake shrinks down. Remove the mug from the microwave and place the cake onto a plate.
Pour the frosting mixture over the top of the cake and then top with the strawberries. ENJOY!
