Healthy Soft Tacos in 20 Minutes!


Do any of you have a hectic lifestyle leaving you with minimal time for preparing a healthy dinner? Well if you are anything like me, the faster the better when it comes to dinner! I know most of us live such crazy busy lives, there is just no time to waste in the kitchen every night! I will make it my duty to post as many HEALTHY MEALS UNDER 30 MINUTES as possible, because I understand this is a huge element to success in your weight loss/fitness journey. Here is just one of these yummy meals under 30 minutes:


Ingredients

Instructions

  1. Gather all ingredients, a cutting board, a sharp knife, 2 pans, and a large spoon/spatula. Clean, de-vein/gut, and dice 2 bell peppers and jalapeños.

  2. Place the peppers into a saucepan with 1/2 tsp. olive oil, 3 tbsp. water, 1/4 tsp. black pepper, and 3/4 tsp. chili pepper. Mix well and sauté the peppers on medium to high heat for 5-8 minutes until soft and slightly brown. All of the liquid should have evaporated when ready.

  3. While you are sautéing the pepper mixture, spray another pan with cooking spray and add 1 lb extra lean ground beef. Flatten and spread the raw beef on the bottom of the pan and cook on medium to high heat, stirring ever few minutes. Cook until the beef starts to brown and this typically takes about 5-7 minutes.

  4. Once the beef begins turning brown, add 3/4 packet of low sodium taco seasoning mix to the beef (I have used all brands and they are all tasty). You will need to add 3/4 cup salsa to the beef at the same time as the taco seasoning mix is added. Mix very well until all beef is fully saturated in taco mix/salsa combo.

  5. Once you have mix the beef/salsa/taco seasoning well, add the pepper mixture to the beef mixture and stir well. Continue to sauté the mixture on medium to high heat for a 2-3 minutes.

  6. Drain a can of low sodium black beans and add the beans to the beef/pepper mixture. Stir well and gentle until all ingredients are well mixed. Cook for another 2-3 minutes and you are finished with the taco meat mixture. If you would like to add more flavor to the mixture, feel free to add the remaining taco seasoning to the dish. You can also add AS MUCH salsa as you wish:) Remove the healthy beef taco mixture from the heat.

  7. Remove the low carb/whole wheat tortillas from the package and place one on a plate.

  8. Add 3 heaping scoops of the healthy beef taco mixture to the center of 1 low carb tortilla. Fold the sides over and rotate, leaving folded side down. Sprinkle low fat shredded Mexican cheese over top of the tortilla if desired (you DO NOT have to put cheese on top). At this point, I place my soft taco into the microwave for 1 minute until the cheese has melted. Feel free to make all of them and bake for a few minutes in a baking dish on 375 degrees. MICROWAVE IS DEFINITELY A TIME SAVER THOUGH!
