Healthy Eggs and Quinoa


Ingredients

I know, I know…you are probably asking yourself if these two foods could possibly taste good together. Well, let me tell you, they taste incredible together! This was just a random pairing one morning…and it has turned into a household favorite! I make this for breakfast, lunch, dinner, snack, WHENEVER! It literally takes 5 minutes to make if you have the quinoa cooked and ready to go. I typically make about 2 cups of quinoa on Sunday nights and this is kept in the fridge for quick use during the week. This is a great way to speed up your meals if you plan in advance!

  • First, I spray a pan with pam.

  • Crack one whole egg into the pan and add 3-4 egg whites to the pan as well (depending on how hungry you are). I do not waste time dirtying another bowl!lol

  • Put stove on high heat and keep a close eye on the eggs because they will start cooking FAST! Mix around with a spatchula for about 3 minutes (breaking up yolk).

  • The eggs should start browning within a few minutes. When they do, add 1/4 cup of cooked quinoa to the pan. Mix around well and turn burner off but keep pan on burner. Add 2 tbsp of parkay spray butter, a sprinkle of black pepper, and a sprinkle of red pepper flakes if desired. I tend to put those darn flakes on EVERYTHING!!!lol

  • Mix around well and pour egg and quinoa mixture onto a plate and serve warm. ENJOY!
