Healthy Crock Pot Buffalo Chicken


Ingredients

So I am sure that you have all had buffalo chicken dip at a holiday party or tailgate, right? Well, do you have any idea how fattening that dip really is?! I promise that you would never touch that side dish again if you knew the ingredients and you were watching your weight. Everything in moderation is a great rule of thumb, but we all know that once the drinks start flowing, moderation goes out the window!


I host many parties and decided that I needed to perfect a healthy, but delicious, buffalo chicken dip. If I make this for a party, I typically make it more as a “dip.” To make this happen, I would just simply use less chicken in the recipe. It is up to you whether you would like to make this dish as a main entree (more chicken) or a side dish (less chicken). The recipe below is more hearty and calls for 6 boneless skinless chicken breasts. If you would like to make this as more of a “dip”, only use 4-5 chicken breasts.

If you would like to make this recipe without the crock pot, use canned chicken or just boil the chicken breasts in a large pot (with water) for 30 minutes before adding other ingredients.


  • Place chicken, water, and chicken broth into the crock pot. Put the crock pot on low and cook for 8-12 hours. Feel free to cook on high for 5-6 hours instead. Make sure to keep the lid on the entire time.

  • When the time has lapsed, drain the chicken by pouring out the liquid.

  • After you drain the chicken, gather your remaining ingredients.

  • Put all ingredients, except the Mexican cheese, into the crock pot with the chicken. Using a large spoon, shred the chicken while mixing the ingredients together. Keep mixing until the chicken is entirely shredded and all ingredients are mixed well. Next, add the shredded Mexican cheese and mix well .

  • Cover the chicken mixture with the lid again and let cook on high for at least 20 minutes before serving. If you are making for a party, keep on low heat and stir every 30 minutes or so. You may want to turn on and off depending on the length of the party.

  • Serve with celery sticks and or baked Tostitos scoops (chips).
