Healthy Berry Cheesecake Trifle

Ingredients
BERRY LAYER
3-4 cups Strawberries
1 cup raspberries
CHEESECAKE LAYER
16 oz Greek cream cheese softened
2 1/2 cups Fat Free Plain Greek Yogurt
1 3/4 cups Lite cool whip
1 1/2 cups stevia in the raw powder
1 1/2 tbsp fresh lemon juice
1 tbsp Vanilla extract
WHIPPED TOPPING LAYER
4-5 cups Lite cool whip
COOKIE CRUMBLE LAYER
1 Box Lorna Doone Cookies Either 100 cal pk or Reg Box
My favorite snack as a little girl was strawberries and cool whip. Lately, I have been quite obsessed with the combination of lite cool whip and greek yogurt, motivating me for this amazing creation!
This is a perfect treat to make for a gathering/party and an even better treat to just keep in the fridge for a few days for the family to nibble on for a healthier dessert option. The only part of this dessert that is borderline unhealthy is the cookie crumble and this can be “halved” or omitted entirely from the recipe if you would like to be extra healthy and totally gluten free. Feel free too choose a gluten free shortbread cookie to use in replace of the Lorna Doone’s if you would like to make this recipe gluten free.
First, clean and trim the strawberries and raspberries. I used just these two, but feel free to mix in blackberries/blueberries if you so desire. Set aside in a bowl or baggie.
In a large bowl, blend the cheesecake layer ingredients together with a hand mixer. Make sure to scrape the sides to ensure everything is well blended to a creamy texture.
Gather the trifle bowl, lite/fat free cool whip, berries, cheesecake filling, and Lorna Doone cookies.
Crunch up one bag of the Lorna Doone Cookies in the bottom of the bowl and spread evenly. I usually sprinkle a thin layer of graham cracker crumbs on the bottom as well, making it easier to spread the next layer.
I then spread 1/3 of the cheesecake filling over crumbs, making sure you spread evenly.
I top this layer with 1 1/2 cup of berries (I used strawberries for first layer) and make sure they are scattered around evenly and along the perimeter in order to make it look pretty:)
I top the berry layer with about 1- 1 1/2 cups of lite/fat free cool whip, and spread evenly.
I then sprinkle about 2 bags of the Lorna Doones over the cool whip layer.
I then repeat these steps until I run out of room and/or ingredients (typically 3 layers of everything). I used raspberries for the second layer and strawberries for the top layer. Feel free to choose any type of berries, but I personally feel these two are the best in combination with the other ingredients.
Feel free to top your trifle any way you would like. I decided to top with strawberries, dollop of cool whip, and some cookies.
Place in the fridge until you are ready to serve. Scoop out and enjoy!
