Crock Pot Fiesta Chicken

I just love cooking in the crockpot. Well, I guess I’m not really doing the cooking, now am I?! That is the best part about crockpots and why you should definitely incorporate this recipe into your hectic life.


  1. Trim the fat off of 4 chicken breasts chicken breasts and cut each breast into 2-3 smaller pieces.

  2. Wash the peppers and cut in the fashion you see below:

  3. Put veggies, chicken, and the remaining ingredients (except black beans and chips) into a large crock pot. Cook on low for 7-10 hrs or high for 4-5 hrs.

  4. About 15 minutes before you turn crock pot off, shred the chicken with your spoon or fork. Add the cream cheese and black beans to mixture. Stir well and let simmer for 15 minutes.

  5. Serve alone, over quinoa, in a low carb tortilla, or scoop with baked tostitos:)

 

  • -4 large chicken breast (boneless/skinless)

  • -1 packet mccormick taco seasoning (low sodium)

  • -1 can small-medium salsa (medium for more liquid)

  • -1 tsp chili powder

  • -1 red bell pepper (chopped)

  • -1 green bell pepper (chopped)

  • -3 medium jalepenos (more or less...chopped)

  • -1/4 tsp black pepper

  • -1 tbsp greek cream cheese (or vegan cream cheese)

  • -1 can black beans (reduced sodium)
