Cheesy Cauliflower Breadsticks
I made cauliflower pizza bites last year for a party I hosted, and have been wanting to try cauliflower in a breadstick recipe. Although this recipe took me a little longer than I expected, IT WAS WORTH IT!!! If you are looking for an awesome low carb breadstick recipe, look no further!!!!!!
1 head cauliflower minced florets
3 large egg whites
1 1/4 cup shredded cheese mozzarela is my preference
3/4 tsp italian seasoning
1/4 tsp ground black pepper
1/2 tsp minced garlic
15 sprays parkay spray butter
1 spray Pam cooking spray
Preheat the oven to 375 degrees.
Cut the florets off of a head of cauliflower and make sure to wash them before putting them into a food processor. You made need to processor the cauliflower in two sessions unless you have a large processor. You should make sure to grind up the cauliflower into a rice like texture. Make sure you do not miss any large clumps!
After you have minced up the cauliflower, place it in a prepared baking dish (spray with cooking spray) and cook in the oven for 15 minutes.
After 15 minutes, remove the dish from the oven and let cool for 5 minutes. Turn the heat up to 450 degrees. Place the cauliflower in a large kitchen towel and squeeze as much water out as you can. You should extract around 1 1/4 cup of liquid from one head of cauliflower. This step may take you about 3 minutes. Pour the liquid down the drain.
Gather the remaining ingredients, a medium bowl, a spoon, parchment paper, and a cookie sheet.
Place the dry cauliflower into the bowl with all other ingredients except the spray butter and 3/4 cup of shredded cheese. You will use 1/2 cup of shredded cheese in the cauliflower dough, and then you will sprinkle the remaining 3/4 cup over the dough once it has cooked for 20 minutes.
Line the cookie sheet with parchment paper and spread the dough on the paper. Form the dough into a rectangle (with your hands) and make sure to smooth out as flat as possible. Spray the top of the dough with spray butter (about 15 sprays).
Place the cookie sheet in the oven and cook on 450 degrees for 20 minutes. Remove the oven and sprinkle the remaining cheese over top the cauliflower "breadstick" bake.
Place back in the oven and cook for 10 minutes. If the cheese is not to your desired golden color, either cook for a few more minutes or broil for 1 minute. Remove from the oven and cut into rectangular pieces. Serve with marinara sauce or just simply enjoy without.
